Parsley, radish & red onion salad
- 1 large red onion , peeled
- 1 tbsp olive oil
- 1 large bunch curly parsley (about 50g/2oz)
- 1 bunch flatleaf parsley (about 25g/1oz)
- 1 bunch of radishes , well rinsed
- 1 tbsp balsamic vinegar
- 1 tsp Dijon mustard
- 3 tbsp extra-virgin olive oil
- 2 tbsp groundnut oil (or vegetable oil)
