  • 2 tablespoons ghee, butter or oil for frying
  • 3 medium potatoes
  • 1/2 cup peas, fresh or defrosted
  • 2/3 teaspoon turmeric
  • 1 teaspoon garam masala
  • 1/4 - 1/2 teaspoon cayenne
  • 3 fresh green chilies, seeded and finely chopped
  • 1-inch piece fresh ginger, minced
  • 1 teaspoon sea salt
  • handful fresh parsley or coriander, rinsed and chopped
