  • ½ cup rice or all purpose flour 
  • Finely grated zest of 1 lemon
  • ½ tsp ground cinnamon
  • ½ tsp freshly grated nutmeg
  • ¼ tsp ground cloves
  • ¼ tsp ground allspice
  • 2/3 cup sugar
  • ¼ cup honey
  • 2 tbsp butter, plus more for the pan
  • Confectioners sugar, for sifting
  • 8 in (20cm) springform pan
