- 2 tbsp olive oil
- 50g fresh breadcrumbs
- 1 garlic clove
- 1 tsp Dijon mustard
- oil spray
- 4 pork chops , trimmed of any excess fat
- 100g bag mixed salad leaves
- vinaigrette , to serve
