- 700g carrots , peeled and thinly sliced
- 1 large onion , thinly sliced
- 1 large garlic clove , crushed
- 1l light vegetable stock
- 125ml freshly squeezed orange juice
- 2 tbsp finely chopped fresh mint
- double cream , for drizzling - optional
