Mushrooms 'fish & chips style' with posh vinegar
- 4 sprigs fresh tarragon
- 2 sprigs fresh thyme
- 6 white peppercorns
- 2 cloves garlic, peeled and finely sliced
- 400 ml white wine vinegar
- 1 litre olive oil
- 100 g plain flour
- sea salt
- freshly ground black pepper
- zest of 1 lemon
- 4 large handfuls mixed mushrooms (porcini, field, girolles and morels)
- 1 small bunch fresh flat-leaf parsley
