Mung Bean Pancakes (Chila)
- 1 cup dried whole mung beans
- 1/4 cup skinless urad dal
- 1 1/2-inch piece fresh ginger, peeled and chopped
- 3 fresh green chilies, seeded and chopped
- 1 1/2 cups water
- 1/2 teaspoon turmeric
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne
- generous dash of asafetida
- 1/2 teaspoon baking soda
- 1 teaspoon sea salt
- fresh ground black pepper to taste
- sesame oil for frying
