Ingredients:

  • ¼ cup (packed) light brown sugar
  • 2 bay leaves
  • 2 cinnamon sticks (about 2 inches each)
  • ½ teaspoon whole cloves
  • ½ teaspoon ground cardamom
  • ½ teaspoon grated nutmeg
  • Zest of 1 orange, peeled in continuous spiral if possible
  • 1 ounce per serving of rum, brandy, or Calvados (optional)
  • ½ cup (1 stick) unsalted butter, at room temperature
  • 2 cups (packed) dark brown sugar
  • 1 tablespoon ground cinnamon
  • ½ teaspoon grated nutmeg
  • ½ teaspoon ground cloves
