Ingredients:
  • butter
  • 2 onions , halved and thinly sliced
  • a bunch coriander , chopped
  • small bunch parsley , chopped
  • pinch saffron
  • 1 tbsp honey
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 400g tin chickpeas , drained
  • 250g spinach
  • 200g couscous
  • 50g sultanas
  • 1 lemon , zested and juiced
  • 250ml vegetable stock , boiling
  • 100g flaked almonds , toasted
  • 200g roasted red peppers , from a jar, chopped
  • 6-8 large sheets filo pastry
  • 6 eggs , hard boiled and peeled
  • 300ml natural yogurt
  • 2 tsp cumin seeds , toasted
  • 50g pomegranate seeds
