Molded Rhubarb Rosemary Cucumber Salad
- 1 lb rhubarb, chopped into 1/2-inch slices
- 1/4 cup lemon juice
- Zest of one lemon
- 3 Tbsp chopped fresh rosemary (or 1 Tbsp dry)
- 1 cup sugar
- 1/2 teaspoon salt
- 2 cups water + 1 cup chilled water
- 3 (1/4 ounce) packets of plain gelatin
- 1-2 cucumbers, peeled, seeds scraped out, chopped
