Mini chocolate pithiviers
- 50g roughly chopped dark chocolate (70% cocoa solids)
- 100g blanched almonds
- 100g golden caster sugar
- 1 tbsp cocoa powder
- 3 egg yolks , 1 whisked with 1 tbsp water to glaze
- 1 tbsp dark rum
- 2 x 375g ready-rolled puff pastry
- 100g butter , softened
