- cup yellow onion, chopped (about 1/3 of a medium onion)
- 1 cup red pepper (about 1 medium pepper), chopped
- 1 teaspoon minced garlic
- Salt and pepper, to taste
- 1 8-ounce can sliced olives, drained
- 1 cup organic spinach, chopped
- cup fresh basil, chopped
- 1 16-ounce package firm or extra firm tofu, drained and crumbled
- cup grated vegan or organic mozzarella cheese
- 1 tablespoon nutritional yeast
- 3 tablespoons soy sauce
