  • 3/4 cup heavy cream
  • 3 tablespoons plus 1 teaspoon whole milk
  • 1/2 sheet (2-gram sheet) gelatin, softened in ice-cold water
  • 1 teaspoon Caramel Sauce (recipe follows)
  • 1/2 teaspoon maple syrup
  • Maldon sea salt
  • 1/3 cup plus 1 tablespoon sugar
  • 3/4 teaspoon light corn syrup
  • 1/8 teaspoon fresh lemon juice
  • 3/4 tablespoon water
  • 1/4 cup plus 2 tablespoons heavy cream
  • 1/2 tablespoon unsalted butter
