Melting ribs with tamarind chipotle sauce
- 2kg pork spare ribs
- 2 tbsp mild chilli powder
- 5 tbsp soft brown sugar
- 1 medium onion , thickly sliced
- 3 plum tomatoes , halved
- 5 garlic cloves
- 100g tamarind paste
- 4 tbsp chipotle chillies in adobo sauce (from Sainsbury's Special Selection or buy online from coolchilli.co.uk)
- a small bunch coriander
- corn on the cob to serve
