Mateus Valencian paella
- 100ml olive oil
- 1 small chicken , jointed into 8
- 1 rabbit , jointed
- 300g green beans
- 2 artichoke hearts , quartered
- 1 tomato , chopped
- 1 tsp sweet paprika
- a pinch saffron
- 200g garrofn beans or butter beans , drained
- 12 to 16 snails , cleaned (optional)
- 500g paella rice
- 2-3 sprigs rosemary
- lemon slices, to serve
