Maryland Panfried Chicken Recipe

Ingredients:
  • 1 frying chicken (3 to 4 pounds), cut into serving pieces
  • 1 quart buttermilk
  • 1 teaspoon salt
  • 1 teaspoon Chesapeake seasoning
  • ½ teaspoon cracked black pepper
  • ½ teaspoon Tabasco Sauce
  • 3 cloves garlic, peeled and cut in half
  • Juice of 1 lemon
  • 2 cups all-purpose flour
  • 1 tablespoon salt
  • 2 teaspoons Chesapeake seasoning
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon rubbed sage
  • ½ teaspoon powdered thyme
  • ½ teaspoon cayenne
  • Vegetable oil (and lard, optional, 3 parts oil to 1 part lard), for frying
  • Reserved cooking fat
  • 1/3 cup all-purpose flour 
  • 2 cups milk
  • Salt and freshly ground black pepper, to taste
