Mango ice cream floats
- 4 egg yolks
- 90g golden caster sugar
- 300ml double cream
- 150ml whole milk
- 650ml tinned Alphonso mango pure
- 3 tbsp lime juice
- 100g golden caster sugar
- 1 vanilla pod , split
- 2 limes , juice only
- 1 large ripe mango , chopped
- good-quality lemonade to top up the glasses, chilled
