Lobhia Masala (Black-Eyed Pea Curry)
- 1 cup dried black-eyed peas
- 1 tablespoon olive oil
- 1 teaspoon cumin seeds
- 1 medium onion, chopped
- 2 large cloves garlic, minced or crushed
- 1-inch piece fresh ginger, minced or grated
- handful of fresh green chillies, seeded and chopped

- 1 medium tomato, chopped
