Lisa's Classic Refried Beans
- 1 1/4 cups dried pinto beans
- 1/2-inch piece fresh ginger, minced, or 1/2 teaspoon powered ginger
- 2 - 3 jalapeos or fresh green chilies, finely diced
- 1 medium tomato, diced
- 1/2 teaspoon cayenne
- 1 teaspoon ground cumin
- 1 - 2 teaspoons chili powder
- 1/2 teaspoon hot paprika
- 2 tablespoons oil or butter
- 1 medium onion, chopped
- 1/2 cup - 3/4 cup fresh or frozen corn
- 1 teaspoon sea salt, or to taste
