Lighter Scotch eggs
- 5 tsp rapeseed oil
- 1 shallot , finely chopped
- 5 medium eggs
- 85g green lentils (drained weight from a 400g can)
- 225g extra lean pork mince (less than 5% fat)
- 2 tsp finely chopped sage
- 3 tsp finely snipped chives
- tsp dry mustard powder
- good pinch of grated nutmeg
- 1 tbsp plain flour
- 25g panko crumbs (Japanese breadcrumbs)
