  • Four 10-inch-long thick rosemary sprigs, soaked in water for 10 minutes
  • 1 cup water
  • 1 tablespoon unsalted butter
  • 2 cups Israeli couscous
  • Kosher salt and freshly ground black pepper
  • 3 tablespoons olive oil
  • 2 red bell peppers, cored, seeded, and cut into 2-inch pieces
  • 2 yellow bell peppers, cored, seeded, and cut into 2-inch pieces
  • 1 red onion, cut into 1-inch dice
  • 1 garlic clove, smashed
  • 1 rosemary sprig
  • 1 basil sprig
  • ½ teaspoon ground cinnamon
  • 1 cup canned chickpeas, drained
  • Scant pinch of cayenne
  • 1 bunch basil, leaves removed and torn into pieces
  • 1 cup plain low-fat yogurt
  • 1 tablespoon mint cut into chiffonade
  • Squeeze of lemon juice
  • Kosher salt
  • Pinch of freshly ground white pepper or a dash of Tabasco sauce
