Jambalaya Recipe

  • 2 tablespoons fresh thyme leaves
  • 1 1/2 cups rice
  • 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-size chunks
  • 1 28-ounce can diced tomatoes
  • 2 cups chicken broth
  • 3 bay leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 pound medium shrimp, peeled and deveined
  • 1 tablespoon lemon juice
