  • 1½ cups long-grain white rice
  • ¼ cup peanut oil
  • 3 carrots, peeled and diced
  • ½ pound mushrooms, diced
  • 1 red bell pepper, cored, seeded, and diced
  • 1 pound large shrimp, peeled, deveined, and cut into 1-inch pieces
  • 3 scallions, white and light green parts only, finely chopped
  • 3 shallots, thinly sliced
  • 3 garlic cloves, minced
  • 1 tablespoon minced fresh ginger
  • 2 small green or red chiles, seeded and finely chopped (see Note)
  • 1 teaspoon paprika
  • 2 tablespoons ketchup
  • 2 tablespoons soy sauce
  • Salt and freshly ground black pepper
  • ¼ pound fresh bean sprouts (about 2 cups)
  • ¼ cup peeled, seeded, and diced cucumber for garnish
  • ½ cup roasted peanuts for garnish
