Ingredients:
  • 4 or 5 sun-dried tomatoes
  • 1 tablespoon sesame seeds
  • 2 tablespoons sesame oil
  • 1 tablespoon black mustard seeds
  • 1 tablespoon toor dal or channa dal, rinsed
  • 1 tablespoon split mung dal, rinsed
  • 1 onion, finely chopped
  • 1-inch piece fresh ginger, minced or grated
  • 1 clove garlic, minced and crushed
  • 2 or 3 fresh green chilies, seeded and finely chopped
  • 2 dried whole red chilies, broken into pieces
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon cayenne
  • 1 teaspoon sea salt
  • 1/4 teaspoon asafetida
  • 2 medium tomatoes, finely chopped
  • generous handful of dried curry leaves
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon white vinegar
