  • Kosher or sea salt and freshly ground pepper
  • 4 cups mixed young tender savory greens, such as mizuna, arugula, watercress, and red mustard
  • Mustard Seed Vinaigrette (below)
  • Parmesan Chips (below)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon toasted whole mustard seeds
  • ¼ cup seasoned rice vinegar
  • ½ cup fresh orange juice
  • 1 tablespoon chopped fresh dill
  • ½ cup olive oil
  • Kosher or sea salt and freshly ground pepper
  • 2 cups freshly grated Parmesan cheese, dry Jack, or Asiago cheese, or a combination
  • 2 teaspoons finely crushed cumin or fennel seeds
