  • 1 tsp freshly ground black pepper
  • 1 recipe Roasted Garlic-Mint Compound Butter (recipe follows)
  • 1 tsp olive oil
  • 2 tsp minced shallots
  • ½ cup Roasted Garlic Purée
  • 1 tsp kosher salt
  • 2 Tbl Riesling wine
  • ½ tsp freshly ground black pepper
  • 1 Tbl mint jelly
  • 2 Tbl finely chopped fresh mint
  • ¾ cup unsalted butter, softened
  • 1 tsp Worcestershire sauce
  • ½ tsp hot sauce
