Grilled Chicken with Pumpkin Seed Sauce
- 2 tablespoons olive oil
- 1/4 cup chopped onion
- 1 garlic clove minced
- 1 jalapeno chile chopped (seeds and ribs removed for less heat, if desired)
- 1/4 cup raw green pumpkin seeds
- 1 1/2 cups packed chopped romaine lettuce (2 ounces)
- 1 tablespoon white-wine vinegar
- Coarse salt and ground pepper
- 1/4 cup packed fresh cilantro leaves
- 4 boneless skinless chicken breast halves (6 to 8 ounces each)
