  • 8 sprigs fresh tarragon, stems crushed with the back of a knife
  • 1½ cups walnut pieces
  • 5 cloves garlic, peeled
  • ½ cup chopped fresh cilantro
  • 1 cup chicken stock or canned broth, warm (not hot)
  • 3 to 4 tablespoons fresh lemon juice
  • Salt, to taste
  • ¼ teaspoon ground coriander
  • ¼ teaspoon ground fenugreek
  • ¼ teaspoon cayenne pepper
  • ½ teaspoon ground turmeric
