Goats cheese & courgette tart with pistachio dressing
- 8 medium courgettes , sliced thinly lengthways
- extra-virgin olive oil
- 2 x 375g packs all-butter puff pastry
- 4 x 100g soft goat's cheese
- 2 red chillies , seeded and thinly shredded
- 2 tbsp white wine vinegar
- 1 garlic clove , crushed
- 4 tbsp pistachios , toasted and finely chopped
- 1 tbsp caster sugar
- rocket salad, to serve
