Goat Cheese, Roasted Red Pepper and Kalamata Olive Mac n Cheese
- 1 pound pasta, your choice
- 6 tablespoons butter
- 6 tablespoons flour
- 2 cloves garlic, chopped
- 3 cups milk
- 1/4 teaspoon pepper
- 1 teaspoon oregano
- 8 ounces goat cheese
- 3 large roasted red peppers, cut into bite sized pieces
- 1/4 cup kalamata olives, pitted and coarsely chopped
- 1 (15 ounce) can artichoke hearts, drained and quartered
- 1/2 cup feta, crumbled
- 1 cup mozzarella, grated
