  • 2 slices of thick-cut bacon, cut crosswise into ¼-inch sticks
  • 2 teaspoons Dijon mustard
  • 1 medium shallot, finely chopped
  • 1 garlic clove, finely chopped
  • 1 teaspoon chopped fresh thyme
  • 2 tablespoons red wine vinegar
  • 1 tablespoon white or white wine vinegar
  • 4 eggs
  • ¼ cup extra virgin olive oil
  • 2 heads of frisée (curly endive), outer leaves and tough core removed, remaining leaves separated and washed and dried well
  • 2 tablespoons chopped fresh parsley
