  • 1 (13.5 ounce) can light coconut milk
  • 1 (14.5 ounce) can diced tomatoes
  • 1 (14.5 ounce) can chicken broth
  • To serve:
  • Cooked basmati rice
  • chopped fresh cilantro
  • mango chutney
