Ingredients:

  • 3 to 4 sprigs fresh thyme
  • 2 imported bay leaves
  • 1 tablespoon black peppercorns
  • 1 tablespoon coriander seeds
  • ¼ teaspoon fennel seeds
  • ¼ teaspoon red pepper flakes
  • 2 star anise (optional)
  • One 12- to 14-pound organic free-range turkey
  • (giblets, liver, and neck reserved for another use, if desired)
  • 1 tablespoon extra virgin olive oil
  • 6 large rosemary branches, tied together to make a brush for basting (optional)
