Feta & pepper quinoa balls with lemon & dill aoli
- 120g quinoa
- olive oil
- 1 small red pepper , finely chopped
- 2 tbsp pine nuts
- 1 lemon , zested and juiced
- 2 handfuls dill , chopped
- 1 handful mint , chopped
- 100g feta cheese , crumbled
- 1 egg
- 4 tbsp light mayonnaise
- 1 cucumber , halved, seeds scooped out and then sliced
- 4 large handfuls salad leaves
