Fennel and herb barbecued whole fish
- 4 whole fish
- 1 large lemon
- 1 large orange
- 1 medium bulb of fennel
- 4 garlic
- 1 medium red onion
- 3 tbsp capers
- 2 large handfuls of mixed fresh herbs - parsley, dill, tarragon
- extra virgin olive oil
- flaked sea salt and freshly ground black pepper
- and crusty bread, to serve salad
- You will need 12-16 lengths of string about 15cm/6in long, soaked in water for 1 hour.
