Farro Minestrone Recipe

  • 2 tablespoons olive oil
  • 1 medium onion, coarsely chopped
  • 2 teaspoons dried Italian seasoning blend
  • ½ teaspoon granulated garlic
  • 1 quart low-sodium chicken or vegetable broth
  • 1 cup semi-pearled farro (see Notes)
  • 1 can (28 ounces) peeled tomatoes, preferably fire-roasted, with liquid
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 medium zucchini, quartered lengthwise and cut into ½-inch slices
  • 3 tablespoons chopped fresh parsley
  • ¼ cup grated Romano cheese, plus more to pass at the table
  • Salt and freshly ground black pepper
  • 2 to 3 teaspoons balsamic vinegar (optional)
