Farro-Stuffed Mini Peppers
- 1/2 cup farro
- 1 cup chicken broth
- 1/2 pound lean ground beef
- 1 tablespoon olive oil
- Pinch of red pepper flakes
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 large tomato, diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon dried parsley
- Salt and pepper, to taste
- 12-16 mini bell peppers (depending on size)
- 1/2 cup low-fat ricotta cheese
- 1 cup marinara sauce
- 1/2 cup low-fat Mozzarella cheese
