Easy Chicken Saltimbocca
- 1 skinless boneless chicken breast, well trimmed and pounded flat to about 1/4 inch or slightly thicker
- 1 slice prosciutto trimmed of any fat
- 1/4 teaspoon ground turmeric
- 1-2 fresh sage leaves
- salt and freshly ground pepper to taste
- 3-4 ounces fresh spinach
- 1 small clove garlic minced
- 1 teaspoon olive oil
- 1 teaspoon fresh lemon juice
