  • 1½ cups milk, scalded and cooled to lukewarm
  • 1 package active dry yeast
  • 1 cup sugar
  • 7½ cups unbleached all-purpose flour
  • ½ teaspoon salt
  • 1½ teaspoons ground mahlepi (see Notes)
  • 1 teaspoon powdered mastic (mastiha; see Notes)
  • 8 tablespoons (1 stick) butter, cut into small pieces, at room temperature
  • 4 large eggs, beaten until frothy
  • Olive oil, for coating the dough and the baking sheets
  • 1 egg yolk beaten with 1 tablespoon milk, for the wash
  • ½ cup (about 2 ounces) sliced almonds
  • 4 to 6 Red Eggs (recipe follows)
  • 3 cups water
  • 2 tablespoons red wine vinegar
  • 2 teaspoons red food coloring
  • 4 to 6 eggs (see Note)
