Duck with summer peas & beans
- 4 plump duck breasts , skin on
- 1 tbsp cracked black peppercorn
- tbsp coarse sea salt
- 450g new potatoes , scrubbed and halved or quartered if large
- 250g shelled fresh broad beans
- 250g shelled fresh peas
- 100g chopped smoked back bacon
- 2 garlic cloves , finely chopped
- 3 tbsp sherry or wine vinegar
- 2 tbsp chopped fresh parsley
