- 2 cooked, skinless chicken breasts , shredded
- 100g crotons (the baked, healthy variety)
- 2 beefsteak tomatoes , cut into large pieces
- 1 celery heart, chopped
- 100g roasted red peppers , from a jar, chopped
- 1 small red onion , peeled, halved and sliced into half-moons
- 10 olives , halved, or 1 tbsp capers
- small bunch basil , leaves only
- 3 tbsp red wine vinegar
- extra-virgin olive oil
