Cream of Onion Soup
- 5 Tb. butter
- 3 lbs. onions, peeled and roughly chopped
- 1 large Russett potato, peeled and chopped
- 3 cloves garlic, peeled and chopped
- 1 Tb. honey
- 6 cups water
- 2 Tb. + 1 tsp. Beef Base Paste
- 2 cups dry white wine
- 1 Bouquet Garni (small fresh herb bouquet with thyme and a bay leaf)
- 1 Tb. balsamic vinegar
- 1/3-1/2 cup heavy cream
- Salt and Pepper
- 1-2 sheets frozen puff pastry, thawed
- 1 cup shredded Fontina cheese
