  • ¾ cup all-purpose flour
  • 3 cups, in all, Basic Seafood Stock
  • ½ pound (2 sticks) unsalted butter, in all
  • 2 pounds peeled crawfish tails or medium shrimp
  • 1 cup very finely chopped green onions
  • 4 cups hot Basic Cooked Rice
