Complete Christmas lunch Recipe

Ingredients:
  • 1 X 4kg turkey
  • 100g butter
  • 1 tsp smoked paprika (optional)
  • 1 lemon , zest cut into strips, then halved
  • 2 onions , halved
  • salt flakes
  • 400g shallots , peeled (this takes a while so do it the day before)
  • 1 tbsp plain flour
  • 200ml white wine
  • 300ml chicken stock
  • Dijon mustard, redcurrant jelly or any flavouring you like to add to the gravy
  • 1kg potatoes , try Maris Piper, cut into evenly sized pieces
  • 100ml olive oil , or 100g goose or duck fat
  • sea salt flakes
  • brioche loaf, crust removed and bread cubed
  • 3 tbsp pine nuts
  • 12 dried apricots , chopped
  • 4 sprigs thyme , leaves stripped off
  • 12 chipolatas , 8 squeezed out of their skins, snip the remaining ones into 3
  • 1 onion , halved and studded with 6 cloves
  • 1 bay leaf
  • 6 black peppercorns
  • 600ml milk
  • breadcrumbs made from the other half of the brioche loaf (200g in all)
  • 50g butter
  • 60ml double cream
  • nutmeg
  • 700g Chantenay carrots , trimmed
  • 25g butter
  • 1 lemon , zested
  • a small bunch parsley , chopped to make 2 tbsp
  • 2 x 50g tubs pancetta cubes
  • 500g frozen peas
