Collard greens, Facebook and Twitter
- 3 bunches of collards (about 3 pounds)
- 1 onion, diced
- 4 cloves of garlic, minced
- 1 carrot, diced
- 2 tablespoons of olive oil
- 2 tomatoes, peeled and diced or 1 14 oz. can of diced tomatoes
- 2 chipotle peppers in adobo, chopped
- 1/4 cup of smooth peanut butter
- 1 tablespoon of apple cider vinegar
