  • 1 to 6 dried red chiles (optional)
  • 1 tablespoon plus 1 teaspoon mustard seeds
  • 2 teaspoons cumin seeds
  • 1 teaspoon ground peppercorns
  • 2 medium red onions, finely chopped
  • 2 tablespoons plus 2 teaspoons kosher salt
  • 6 medium tomatoes, finely chopped
  • 2 cups coconut milk
  • 2 tablespoons canola oil
  • ½ cup chopped fresh cilantro
