Cioppino Recipe

  • 2 tablespoons extra virgin olive oil
  • 1 carrot, diced
  • 2 ribs celery, diced
  • ½ onion, diced
  • 1 shallot, diced
  • 3 cloves garlic, 2 minced, 1 cut in half
  • 2 dried hot chiles, stems removed, crumbled
  • 4 anchovy fillets, drained and minced
  • 1 cup dry white wine
  • 1½ cups fish stock (see Tip)
  • ½ (28-ounce) can peeled plum tomatoes, drained, seeded, and diced
  • 1 tablespoon tomato paste
  • 1 bay leaf
  • Freshly ground black pepper
  • ¼ cup chopped fresh flat-leaf parsley
  • About 5 pounds cleaned fish and shellfish (see Note)
