Chickpeas with Mango Powder (Amchoor Chana)
- 1 1/4 cups dried chickpeas
- 2 tablespoons ghee or a mixture of butter and oil
- 1 teaspoon cumin seeds
- 2 - 3 black cardamom pods, crushed
- 1 cinnamon stick, broken in half
- 1 teaspoon ground cumin
- 2 tablespoons mango (amchoor) powder
- 1 tablespoon ground coriander
- 1/2 teaspoon cayenne
- 1/2 teaspoon turmeric
- 2 medium ripe tomatoes, finely chopped
- generous handful of fresh parsley or cilantro, chopped
- 1 1/2 teaspoons sea salt, or to taste
- 1 small red onion or shallot, finely chopped
