Ingredients:
  • 1 1/2 cups dried chickpeas
  • 1-inch piece fresh ginger, minced
  • 1 clove garlic, crushed
  • 1/4 teaspoon baking soda
  • 4 - 5 black cardamon pods, crushed
  • 1 stick of cinnamon
  • 2 bay leaves
  • 5 cups water
  • 3 tablespoons sesame oil or ghee
  • 1 teaspoon cumin seeds
  • 1 teaspoon black mustard seeds
  • 1/2 teaspoon ajwain seeds or dried thyme
  • 1 large onion, finely chopped
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • pinch of asafetida
  • 1 1/2 teaspoons sea salt
  • 1 large tomato, diced
  • 3 fresh green chilies, seeded and sliced into small strips
  • 3 tablespoons tamarind paste
  • 1/2 cup fresh cilantro or parsley, chopped
  • 2 tablespoons fresh mint, trimmed and chopped
