Ingredients:
  • 1/3 cup reduced sodium soy sauce
  • 1/2 cup grapeseed oil
  • 2 tablespoons freshly grated ginger
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon freshly ground black pepper
  • 2 boneless, skinless chicken breasts cut into 3-inch strips
  • For the Peanut Noodles8 ounces whole wheat spaghetti
  • 1/2 lime, juiced
  • 2 cloves garlic, minced
  • 2 tablespoons honey
  • 1/2 cup creamy peanut butter
  • 2/3 cup hot water
  • 2 tablespoons reduced sodium soy sauce
  • For the Cucumber Salad1 medium cucumber, thinly sliced
  • 1 teaspoon white wine vinegar
  • 1 tablespoon honey
  • slight pinch of cayenne pepper (I used red pepper flakes)
